
Kind of like Gingerbread Cake’s spicy older cousin who already has a Driver’s License. Use this recipe to make the Lebkuchengewürz blend.

Ingredients
- 2 cups flour
- 1/4 cup almond meal
- 1 tsp Baking powder
- 1 tsp Baking soda
- 2 TBSP Lebkuchengewürz
- 1/2 tsp Ground White Pepper
- 1/2 tsp Salt
- 1 3/4 cups packed light-brown sugar 370g
- 3/4 cup Vegetable Oil 175ml
- 3/4 cup unsweetened applesauce 185g
- 4 large eggs
- 2 tsp Vanilla Extract
- 1 cup Buttermilk 240 ml

- Preheat oven to 350 degrees. Prepare pans with release spray and parchment paper. This recipe makes enough for 2-9 inch cakes or 3-8' cakes. Set pans aside.
- In a mixing bowl whisk together flour, almond meal, baking powder, baking soda, salt, lebkuchengewürz blend and ground white pepper. Set aside.
- Pour brown sugar into the bowl of an electric stand mixer. Pour in vegetable oil and applesauce, set mixer with paddle attachment and blend until well combined. Mix in eggs and vanilla. Add in 1/3 of the flour mixture and mix on low speed until combined, then blend in 1/2 of the buttermilk. Add another 1/3 of the flour mixture and other half of buttermilk. Finish by adding remaining 1/3 of flour and mix until well combined. Divide mixture evenly among prepared baking pans. Bake in preheated oven until toothpick inserted into center comes out clean, about 28 - 32 minutes. Allow to cool several minutes then run a knife around edges to ensure cake is loose and invert upside down onto a wire rack to cool. Cool completely then level tops of cakes as needed.
